Two Easy Make-Ahead Breakfast Options

I love love Saturday and Sunday morning breakfasts with my family, but during the week there isn’t enough time. I used to be one of those people who bought the pre-made breakfast options at the grocery store. For example, chocolate muffins and croissants were a definite favorite. However, those breakfast options are pretty pricey. They would fill me up in the moment, but within an hour I would have a sugar crash and be hungry again.

I have tried several different breakfast options and Overnight Oats and Greek Yogurt Parfaits became my very quick very easy options for the summer. Other times of the year I have some easy cook ahead meals, but when the low of the night is 84 degrees, and don’t want anything hot, these are two perfect options. They also take 5 minutes to prep. What’s not to love about that?

Breakfast Option 1: Overnight Oats

You can’t get any easier with overnight oats. These are an awesome family breakfast option too because you can mix up the toppings for variety, and everyone can pick their own toppings. This is one of my daughters favorite breakfasts because she has a bit of a sweet tooth, so I can sweeten it up for her by adding foods like raisins and fresh fruit that are good for her diet but also give her those sweets she desires at the same time.

Prepping overnight oats

I prep overnight oats for 3 days in advance. I wish I could prep all 5 days of the work week, but by Thursday and Friday they taste super soggy and icky. The good news is these literally take FIVE MINUTES to prep. Seriously awesome!

PREP STEP 1: Take out 3 small portioned containers, Almond milk, and Quick Oatmeal

PREP STEP 2: Lay out your containers with their lids off.

PREP STEP 3: Pour 1 cup of almond milk  into each container (other milks work too, but will make them thicker).

PREP STEP 4: Pour 3/4 cup of quick oats each container.

PREP STEP 5: Stir until oats are covered.

PREP STEP 6: Place in the fridge overnight, for up to three days.

PREP STEP 7: When you are ready to eat, take oatmeal out of fridge and put on desired toppings.

If you want to make your morning ritual even easier you can portion out your toppings too. If you are putting something on top that needs to be cut up like apples, do it ahead of time. It will make your morning so much easier.

Overnight Oats Topping Ideas:

To add some sweet or extra flavor Honey Agave Syrup Cinnamon
Fresh Fruit Banana Fresh Berries Apple chunks
To add a bit of crunch Trail mix Almond slivers Cashews

I like to choose 1 from each category. Every few weeks or so I start to get bored and will switch up my toppings. At the moment, I am all about: honey, fresh blueberries and trail mix.

  • Quick Oats
  • Almond Milk
  • Desired Toppings


  1. Take out quick oats and almond milk.
  2. Lay out three containers.
  3. Pour 1 cup of almond milk into each container.
  4. Pour 3/4 cup of quick oats into each container.
  5. Stir oats until they are coated with milk.
  6. Place oats in fridge overnight for up to three days.
  7. When ready to eat take out of fridge, top with desired toppings.

Breakfast Option 2: Greek Yogurt Parfait

In all honesty I don’t prep these ahead of time. I always have plain Greek yogurt in my fridge. It is as a great replacement for mayo in chicken salads, it can make up a quick Tzatziki Sauce, and makes a perfect dessert for my daughter (seriously, just add chocolate chips and honey and she has a protein packed dessert for those nights she refuses to eat her chicken). I don’t normally portion these out ahead of time because they are my breakfast of choice when I wake up and realize that I forgot to prep a breakfast for myself.

Use the same topping ideas as the overnight oats and wa-la, you have a breakfast in less then five minutes.
